I wanted to share an easy cookie recipe with you—
one that we made for Valentine’s Day, but honestly, it’s perfect for anytime you need a sweet treat!
The dough is slice-and-bake style, which means you can keep it in the freezer,
ready to go whenever the kiddos are craving something sweet (or whenever you are 😊).
COOKIE INGREDIENTS:

2 sticks (1 cup) unsalted butter, at room temperature

2/3 cup confectioners’ sugar, sifted

2 large egg yolks, at room temperature
-
Pinch of salt
-
1-2 teaspoons vanilla extract
-
2 cups all-purpose flour

INSTRUCTIONS

Beat the butter on medium speed until smooth. Add the sugar and mix until well-combined.

Add the egg yolks and vanilla extract, mixing until smooth.

Lower the mixer speed and add the salt and flour, about 1/2 cup at a time, until fully mixed.

Divide the dough into two balls, wrap them in plastic wrap, and chill in the fridge for 30 minutes.

Roll each ball into logs about 1.5" in diameter. Don’t worry about being too precise (I cut down the middle to make a rough heart shape).

Re-wrap the logs in plastic and chill for at least 2 hours.

Once chilled, slice the logs into thin cookies (around 1/2 inch thick). Pinch the bottom of each to help form the heart shape.

Bake at 350°F for 12-15 minutes, or until just set and not browned.

Let the cookies cool.
:FROSTING INGREDIENTS:

1/2 cup unsalted butter, room temperature

1 1/2 teaspoons vanilla extract

2 cups confectioners’ sugar, sifted
-
2 tablespoons milk

FROSTING INSTRUCTIONS:

Mix the butter on medium speed until smooth. Add the vanilla extract.

Gradually add the powdered sugar, mixing until smooth.

Add the milk and mix for a few minutes until the frosting is creamy and even in texture.
Tip: You can add food coloring if you’d like! Since I didn’t have any food coloring on hand, I did a little digging online and found that frozen berries can be a great natural alternative! Simply let them thaw in the fridge, and then pour the syrup that forms into your frosting. It worked wonderfully, gave the frosting a beautiful red tint, and tasted delicious!
